How Swiss Water decaf works

Many decaf coffees are made by rinsing green (unroasted) beans with a chemical solvent such as methylene chloride or ethyl acetate. The Swiss Water Process uses only water, time, temperature and filtration:

  1. Soak. Green coffee is soaked in hot water, which draws out caffeine along with the compounds that carry flavor.
  2. Filter. That water runs through carbon filters that trap caffeine, leaving a flavor-rich extract with the caffeine taken out.
  3. Repeat. Fresh beans soak in the extract. Because it already holds flavor compounds, mostly caffeine moves out and the flavor stays in the bean.

Nothing is added to the bean but water, so there’s no solvent step. The aim is to take out caffeine while leaving the coffee’s own character — the idea behind White Cat: decaf that still tastes like coffee.

Decaf coffee questions

How much caffeine is in decaf coffee?

Decaf is not caffeine-free; it still contains a small amount of caffeine. Swiss Water states its process removes 99.9% of the caffeine, and across decaf coffee in general an 8 oz cup typically contains about 2–15 mg. These are general industry figures, not lab tests of White Cat. For the full breakdown, see How much caffeine is in your coffee?

Is decaf coffee less acidic?

Not automatically. How acidic a coffee tastes depends mostly on the beans, the roast and how you brew, and some people find decaf gentler on the stomach. We haven’t lab-tested White Cat’s acidity, so we don’t label it “low acid.” Its flavor leans toward dark raisin and cocoa rather than bright, citrusy notes.

How is Swiss Water decaf made?

Green coffee is soaked in water to release its caffeine, the water is filtered through carbon to remove the caffeine, and that flavor-rich extract is used to decaffeinate the next batch of beans. It uses no chemical solvents.

Should I buy whole bean or ground decaf?

Whole bean if you have a grinder: whole beans stay fresh longer, and grinding right before you brew gives the fullest flavor. If you don’t, choose White Cat’s Drip (ground) option for your drip coffee maker.

How do I brew decaf coffee?

Brew it exactly like regular coffee. A common starting point is about 1 part coffee to 16 parts water by weight, with water just off the boil. If it tastes sour, grind finer; if it tastes bitter, grind coarser. Our home brewing guide covers each method.
